Hollow Crown Parsnip

One of the oldest heirloom varieties of parsnip, hollow crown is still hard to beat. Sweet and mild nutty flavoured long tapered white roots. While it takes a long season to grow parsnips, they are relatively care free once plants are bigger than the surrounding weeds and thinned to 2-3 inches apart. We like to leave most of them in the ground until late winter/early spring, then dig them up to enjoy their extra sweet flavour.
