New Zealand Spinach

(Tetragonia tetragoniodes) A heat loving cousin to regular spinach. New Zealand Spinach is at its peak in the summer after other greens have bolted and lasts all the way until a fall frost. Delicious raw in salads or replacing spinach in any recipe (think spanakopita!). The plants are low and spreading, with tender green leaves that resemble spinach in appearance and texture. Native to the sand dunes and shorelines of New Zealand, Australia and the Eastern Pacific. Be patient for germination – not only can seeds take weeks to sprout, like many “wild” plants the seeds have built in variable dormancies. To improve even germination, gently rub the hard seed coat with sandpaper and/or soak the seeds for a day before planting into warm soil.
