One of the first seeds started indoors, and often the last one harvested from the garden in the fall, leeks grow slowly but become mighty after the summer veggies are done. Aside from taking a full growing season to size up, they are easy to grow. We use them in place of onions in just about any recipe – leeks have a mild onion-like flavour.
