(Helianthus tuberosus) AKA Jerusalem Artichoke. A relic of Soviet-era breeding, this is another sunchoke standout, producing neat clumps of smooth tubers. Red skinned with tan flesh. Dormant tubers are shipped after our nursery bed thaws enough to dig (usually in April). Price per pound.
